How to Make Yogurt Banana Bread

  1. Mash bananas  thoroughly with a fork or potato masher. 
  2. Ensure the yogurt is at room temperature for better blending. 
  3. Bring the eggs to room temperature as well. 
  4. Whisk together the flour, baking soda, baking powder, and salt in a medium bowl.
  5. For the blender method, add the mashed bananas, yogurt, oil, eggs, vanilla extract, and sugar to the blender. 
  6. Blend on medium speed until completely smooth, about 1-2 minutes. For the mixing bowl method, combine the mashed bananas, yogurt, oil, eggs, vanilla extract, and healthy sweetener of your choice in a large mixing bowl. Use an electric mixer on medium speed to blend until smooth.
  7. Gradually add the dry ingredients to the wet ingredients in the blender (on low speed) or the mixing bowl. Mix until just combined. Avoid overmixing, as this can lead to tough bread. If you are mixing with an electric mixer, switch to a spatula towards the end of mixing the dry ingredients into the wet ingredients. If you wish to add nuts, chocolate chips, or other add-ins, fold them gently with a spatula.
  8. The batter should be smooth, fluffy, and pourable. It shouldn’t be too thick or too runny. If it is too thick, add a tablespoon or two of milk or water to thin it out. If it is too runny, add a tablespoon or two of flour to thicken it.
  9. For the Zojirushi Bread Machine: Choose the “Cake” or “Quick Bread” setting on your Zojirushi bread machine. Set the crust color to your preference.
  10.  If your machine has an “add” beep, add nuts or chocolate chips when prompted. Otherwise, carefully add them after the initial mixing cycle.
  11. Once the cycle is complete, carefully remove the bread pan from the machine using heat-proof gloves.
  12.  Let the bread cool in the pan for 10 minutes before removing it and placing it on a wire rack to cool completely.
